Description

Ingredients

  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon + 1/8 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 ½ teaspoons ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ cup canola oil (or vegetable oil)
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon apple cider vinegar (or white vinegar)
  • ¼ cup molasses (unsulphured)
  • 1 cup water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, ground ginger, ground cloves, and salt. Whisk until well blended.
  3. In another bowl, mix the canola oil, vanilla extract, apple cider vinegar, molasses, and water until fully combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix; a few lumps are perfectly fine.
  5. Transfer the batter to the prepared baking dish and smooth the top.
  6. Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve warm, dusted with powdered sugar or topped with whipped cream.
