Ingredients

  • 4 cups all-purpose flour
  • 2¼ teaspoons (1 packet) instant yeast
  • 1½ teaspoons salt
  • 1½ cups warm water (about 110°F)
  • 1 tablespoon sugar
  • ¼ cup extra virgin olive oil, plus more for greasing
  • 34 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs or chopped rosemary (optional)
  • Flaky sea salt, for topping

Instructions

  1. In a large bowl, stir together warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy. Add flour and salt, mixing until a sticky dough forms.
  2. Coat the dough in a tablespoon of olive oil, cover it, and let rise in a warm spot for approximately 1 to 1.5 hours until doubled in size.
  3. Grease a 9×13-inch baking pan. Heat 2 tablespoons of olive oil with minced garlic for about a minute until fragrant. Set aside.
  4. Transfer the risen dough into the prepared pan. Gently press to the corners, allow it to rest for 10 minutes if necessary, then finish stretching. Cover and let rise for another 30–45 minutes.
  5. Preheat your oven to 425°F (220°C). Dimple the dough with your fingers, brush on garlic oil, and sprinkle with Parmesan, herbs, and sea salt. Bake for 20–25 minutes until golden brown.
  6. Allow the focaccia to cool in the pan for 5–10 minutes before transferring to a wire rack. Slice and serve warm.

Notes

For best flavor, use fresh garlic and grated Parmesan. Experiment with toppings like sun-dried tomatoes or fresh herbs.
