- 1.5 lbs baby potatoes, halved

- 1 tsp dried basil

- 1/4 cup olive oil
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Place the chicken breasts and halved potatoes in the crockpot.
- In a mixing bowl, combine grated parmesan, minced garlic, dried oregano, dried basil, salt, pepper, and olive oil. Mix until well blended.
- Pour the cheese and herb mixture over the chicken and potatoes, ensuring they are well-coated.
- Cover the crockpot and cook on low for 6 hours or high for 3 hours.
- Before serving, sprinkle the dish with freshly chopped parsley for an extra pop of color and flavor.
Notes
For added flavor, sear chicken breasts before adding them to the crockpot or stir in a splash of heavy cream during the last 30 minutes of cooking.
