  • Total Time: 70 minutes
  • Yield: 4 servings 1x
  • Diet: Paleo

Description

A delightful meatloaf that combines ground chicken with the bold flavors of garlic and Parmesan cheese for a satisfying dish.

Ingredients

Scale
  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. Sauté the diced onions in a skillet over medium heat until softened, about 5 minutes.
  3. In a large bowl, mix the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until well combined.
  4. Pour the mixture into the greased baking dish, forming it into a loaf shape.
  5. Sprinkle the remaining Parmesan cheese on top, and optionally add a dash of paprika or Italian seasoning.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  7. Allow it to rest for 10 minutes before slicing.

Notes

For best flavor, use fresh garlic and high-quality Parmesan cheese. Avoid overmixing the ingredients to keep the meatloaf tender.
