- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth

Instructions
- Prepare the Potatoes: Wash the baby potatoes and halve them. Mince the garlic and set aside.
- Season the Chicken: Rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes (if using).
- Place Ingredients in Crockpot: Layer the halved potatoes in the bottom, then place the seasoned chicken breasts on top.
- Add Chicken Broth: Pour the chicken broth over the chicken and potatoes.
- Add Garlic and Cheese: Sprinkle the minced garlic over the chicken, then add the grated Parmesan cheese on top.
- Cook the Mixture: Cover the crockpot and set to cook on low for 6–7 hours or high for 3–4 hours.
- Check Doneness: Ensure the chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
- Serve and Enjoy: Remove the chicken and potatoes from the crockpot, spooning any remaining sauce over the top.
- Garnish: Optionally chop fresh parsley and sprinkle over the dish before serving.
