Description

A comforting one-pot meal of tender chicken breasts infused with garlic and paired with fluffy baby potatoes, all cooked in a crockpot for an effortless dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash and halve the baby potatoes.
  2. Rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes.
  3. Layer the halved potatoes at the bottom of the crockpot.
  4. Place the seasoned chicken breasts on top of the potatoes.
  5. Pour the chicken broth over the chicken and potatoes.
  6. Sprinkle the minced garlic and then the grated parmesan cheese over the chicken.
  7. Cover and cook on low for 6–7 hours or high for 3–4 hours until the chicken is cooked through.
  8. Check the internal temperature; it should reach 165°F (75°C).
  9. Remove gently from the crockpot, serve, and garnish with fresh parsley if desired.

Notes

For added nutrition, consider adding more vegetables like carrots or green beans to the crockpot.
