Ingredients

  • 3 cups all-purpose flour, plus extra for dusting
  • 2 teaspoons fine sea salt
  • 1/2 teaspoon instant yeast
  • 1 1/2 cups lukewarm water (90-100°F)
  • 4 cloves garlic, minced finely or pressed
  • 2 tablespoons fresh herbs (rosemary, thyme, or a mix), chopped finely
  • 1 tablespoon olive oil, for coating

Instructions

  1. In a large mixing bowl, whisk together the flour, salt, and instant yeast.
  2. Stir in the minced garlic and chopped herbs until evenly distributed.
  3. Gradually pour in the lukewarm water while stirring with a wooden spoon until no dry flour remains. Expect a sticky, rough dough.
  4. Cover the bowl tightly with plastic wrap or a damp towel. Let it rise at room temperature for 12 to 18 hours until doubled and bubbly.
  5. Once risen, generously flour your work surface and hands. Carefully scrape the dough onto the floured surface and fold the edges towards the center to create a round shape.
  6. Transfer the shaped dough onto oiled parchment paper. Cover it loosely with a towel and let it rest for 45 minutes to 1 hour.
  7. Preheat your oven to 450°F with the Dutch oven and its lid inside for 30 minutes.
  8. Carefully remove the hot Dutch oven and, using the parchment as a sling, lower the dough into the pot. Score the top with a sharp knife.
  9. Cover with the lid and bake for 30 minutes. Remove the lid and bake uncovered for an additional 15 to 20 minutes until the bread achieves a deep golden brown color.
  10. Transfer the bread to a wire rack to cool for at least 30 minutes before slicing.

Notes

For a unique twist, consider using different herbs or adding a pinch of cheese.
