- 3 cups all-purpose flour, plus extra for dusting
- 2 teaspoons fine sea salt
- 1/2 teaspoon instant yeast
- 1 1/2 cups lukewarm water (90-100°F)
- 4 cloves garlic, minced finely or pressed
- 2 tablespoons fresh herbs (rosemary, thyme, or a mix), chopped finely
- 1 tablespoon olive oil, for coating
Instructions
- In a large mixing bowl, whisk together the flour, salt, and instant yeast.
- Stir in the minced garlic and chopped herbs until evenly distributed.
- Gradually pour in the lukewarm water while stirring with a wooden spoon until no dry flour remains. Expect a sticky, rough dough.
- Cover the bowl tightly with plastic wrap or a damp towel. Let it rise at room temperature for 12 to 18 hours until doubled and bubbly.
- Once risen, generously flour your work surface and hands. Carefully scrape the dough onto the floured surface and fold the edges towards the center to create a round shape.
- Transfer the shaped dough onto oiled parchment paper. Cover it loosely with a towel and let it rest for 45 minutes to 1 hour.
- Preheat your oven to 450°F with the Dutch oven and its lid inside for 30 minutes.
- Carefully remove the hot Dutch oven and, using the parchment as a sling, lower the dough into the pot. Score the top with a sharp knife.
- Cover with the lid and bake for 30 minutes. Remove the lid and bake uncovered for an additional 15 to 20 minutes until the bread achieves a deep golden brown color.
- Transfer the bread to a wire rack to cool for at least 30 minutes before slicing.
Notes
For a unique twist, consider using different herbs or adding a pinch of cheese.
