Description

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. In a pot, heat a splash of olive oil over medium heat.
  2. Add the chopped onion, diced carrots, and celery. Sauté until softened (about 5-7 minutes).
  3. Stir in the minced garlic and cumin, cooking for 1 minute until fragrant.
  4. Add the rinsed chickpeas and vegetable broth. Bring to a boil.
  5. Once boiling, reduce heat and let simmer for 15-20 minutes.
  6. Season with salt and pepper to taste.
  7. For a creamy consistency, blend with an immersion blender or regular blender; for a chunky texture, leave as is.
  8. Serve hot, garnished with fresh parsley.

Notes
