Ingredients

- 1 can of chickpeas, drained and rinsed
- 4 cups vegetable broth
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- In a pot, heat a splash of olive oil over medium heat.
- Add the chopped onion, diced carrots, and celery. Sauté until softened (about 5-7 minutes).
- Stir in the minced garlic and cumin, cooking for 1 minute until fragrant.
- Add the rinsed chickpeas and vegetable broth. Bring to a boil.
- Once boiling, reduce heat and let simmer for 15-20 minutes.
- Season with salt and pepper to taste.
- For a creamy consistency, blend with an immersion blender or regular blender; for a chunky texture, leave as is.
- Serve hot, garnished with fresh parsley.
