Fruity Pebbles Cheesecake Tacos

  • Total Time: 45 minutes
  • Yield: 8 servings 1x
  • Diet: Vegetarian

Description

A fun dessert combining fruity cereal and creamy cheesecake filling, perfect for any occasion.

Ingredients

Scale
  • 3 cups Fruity Pebbles cereal
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 1 cup whipped cream
  • Additional Fruity Pebbles cereal (for topping)

Instructions

  1. In a mixing bowl, combine the Fruity Pebbles cereal with the melted butter. Stir until every flake is coated.
  2. Press the mixture firmly into small taco-shaped molds or muffin tins, ensuring it’s compact. Chill them in the refrigerator for at least 30 minutes until set.
  3. Meanwhile, using a hand mixer, beat the softened cream cheese until it’s light and fluffy.
  4. Gradually blend in the powdered sugar and vanilla extract until smooth and creamy.
  5. Gently fold the whipped cream into the cream cheese mixture, taking care to maintain that airy texture.
  6. Once the taco shells are firm, generously spoon the cheesecake filling into each shell.
  7. Top with extra Fruity Pebbles for a delightful crunch. Serve immediately or chill for a firmer texture.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Assemble before serving to keep taco shells from getting soggy.
