Instructions
- In a mixing bowl, combine the Fruity Pebbles cereal with the melted butter. Stir until every flake is coated.
- Press the mixture firmly into small taco-shaped molds or muffin tins, ensuring it’s compact. Chill them in the refrigerator for at least 30 minutes until set.
- Meanwhile, using a hand mixer, beat the softened cream cheese until it’s light and fluffy.
- Gradually blend in the powdered sugar and vanilla extract until smooth and creamy.
- Gently fold the whipped cream into the cream cheese mixture, taking care to maintain that airy texture.
- Once the taco shells are firm, generously spoon the cheesecake filling into each shell.
- Top with extra Fruity Pebbles for a delightful crunch. Serve immediately or chill for a firmer texture.
