Ingredients

- 150 grams sifted super-fine almond flour
- 180 grams powdered sugar
- 1/4 teaspoon salt
- 120 grams large egg whites (about 4 large eggs, at room temperature)
- 60 grams granulated sugar
- 4 drops liquid-gel food coloring
- 1 teaspoon pure vanilla extract
- Filling of your choice (recommended: vanilla buttercream)
Instructions
- In a medium bowl, sift the almond flour and powdered sugar together. Set aside.
- Clean your mixing bowl with vinegar and add salt and egg whites; mix on medium-high until bubbly. Gradually add granulated sugar and whisk until glossy, stiff peaks form.
- Mix liquid food coloring and vanilla extract into the meringue until fully combined.
- Gently fold the dry mixture into the meringue in three additions, being careful not to over-mix.
- Transfer the batter to a piping bag and pipe uniform circles onto lined baking sheets, leaving space in between.
- Tap the trays on the counter to release bubbles and allow the macarons to sit until a skin forms (about 30 to 60 minutes).
- Preheat the oven to 315°F and bake for 12 to 15 minutes until firm to the touch.
- Let the macarons cool completely before pairing and filling with your desired frosting.
Notes
To store, keep baked macarons in an airtight container at room temperature for up to 3 days. Refrigerate filled macarons for up to a week, or freeze unfilled shells for up to 3 months.
