French Macarons

Description

Delicate and colorful cookies with a crisp shell and a chewy center, perfect for any occasion.


Ingredients

  • 150 grams sifted super-fine almond flour
  • 180 grams powdered sugar
  • 1/4 teaspoon salt
  • 120 grams large egg whites (about 4 large eggs, at room temperature)
  • 60 grams granulated sugar
  • 4 drops liquid-gel food coloring
  • 1 teaspoon pure vanilla extract
  • Filling of your choice (recommended: vanilla buttercream)

Instructions

  1. In a medium bowl, sift the almond flour and powdered sugar together. Set aside.
  2. Clean your mixing bowl with vinegar and add salt and egg whites; mix on medium-high until bubbly. Gradually add granulated sugar and whisk until glossy, stiff peaks form.
  3. Mix liquid food coloring and vanilla extract into the meringue until fully combined.
  4. Gently fold the dry mixture into the meringue in three additions, being careful not to over-mix.
  5. Transfer the batter to a piping bag and pipe uniform circles onto lined baking sheets, leaving space in between.
  6. Tap the trays on the counter to release bubbles and allow the macarons to sit until a skin forms (about 30 to 60 minutes).
  7. Preheat the oven to 315°F and bake for 12 to 15 minutes until firm to the touch.
  8. Let the macarons cool completely before pairing and filling with your desired frosting.

Notes

To store, keep baked macarons in an airtight container at room temperature for up to 3 days. Refrigerate filled macarons for up to a week, or freeze unfilled shells for up to 3 months.
