Description

This focaccia bread topped with caramelized onions and white cheddar is a delightful take on a classic that elevates any meal.

Ingredients

Scale
  • 2 cups warm water
  • 1 tablespoon sugar
  • 2 1/4 teaspoons active dry yeast
  • 5 cups all-purpose flour
  • 1 tablespoon salt
  • 1/4 cup olive oil (plus more for drizzling)
  • 2 large onions, thinly sliced
  • 1 cup white cheddar cheese, shredded
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (like rosemary or thyme) for topping

Instructions

  1. In a bowl, combine the warm water, sugar, and yeast. Let it sit until foamy, about 5-10 minutes.
  2. In a large mixing bowl, combine the flour and salt. Once the yeast mixture is ready, add it along with the olive oil. Mix until a dough forms.
  3. Turn out the dough onto a floured surface and knead for about 10 minutes until smooth.
  4. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. In a skillet, heat olive oil over medium heat, adding the sliced onions. Stir frequently for about 15-20 minutes until they’re caramelized. Add garlic, salt, and pepper, and cook for another minute.
  6. Preheat your oven to 425°F (220°C).
  7. After the dough has risen, punch it down and spread it out on a greased baking sheet.
  8. Use your fingers to make dimples in the dough. Drizzle with olive oil and sprinkle with salt.
  9. Spread the caramelized onion mixture over the dough, then top with shredded white cheddar and sprinkle fresh herbs.
  10. Place in the oven and bake for 20-25 minutes, or until golden brown.
  11. Allow the focaccia to cool slightly before slicing and serving.
