- 1 tablespoon sugar
- 2 1/4 teaspoons active dry yeast
- 5 cups all-purpose flour
- 1 tablespoon salt

- 2 large onions, thinly sliced
- 1 cup white cheddar cheese, shredded
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (like rosemary or thyme) for topping
Instructions
- In a bowl, combine the warm water, sugar, and yeast. Let it sit until foamy, about 5-10 minutes.
- In a large mixing bowl, combine the flour and salt. Once the yeast mixture is ready, add it along with the olive oil. Mix until a dough forms.
- Turn out the dough onto a floured surface and knead for about 10 minutes until smooth.
- Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour, or until doubled in size.
- In a skillet, heat olive oil over medium heat, adding the sliced onions. Stir frequently for about 15-20 minutes until they’re caramelized. Add garlic, salt, and pepper, and cook for another minute.
- Preheat your oven to 425°F (220°C).
- After the dough has risen, punch it down and spread it out on a greased baking sheet.
- Use your fingers to make dimples in the dough. Drizzle with olive oil and sprinkle with salt.
- Spread the caramelized onion mixture over the dough, then top with shredded white cheddar and sprinkle fresh herbs.
- Place in the oven and bake for 20-25 minutes, or until golden brown.
- Allow the focaccia to cool slightly before slicing and serving.
