  • Total Time: 50 minutes
  • Yield: 4 servings 1x
  • Diet: Vegan

Description

Crispy buffalo cauliflower bites that offer a healthier alternative to traditional buffalo wings, perfect for snacks or gatherings.

Ingredients

Scale
  • 1 large head of cauliflower (cut into bite-sized florets)
  • 3/4 cup all-purpose flour (or gluten-free blend)
  • 1/2 cup water (room temperature)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cornstarch
  • 1 cup buffalo sauce (like Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted (optional)
  • Ranch or blue cheese dressing (for serving, optional)
  • Chopped fresh parsley or celery sticks (optional garnishes)

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cornstarch, garlic powder, smoked paprika, salt, and black pepper.
  3. Slowly incorporate the water into the dry mixture until the batter is smooth and thick.
  4. Dip each cauliflower piece into the batter, ensuring full coverage, and shake off excess.
  5. Evenly space the coated florets on the prepared baking sheet.
  6. Bake for 20 minutes, then flip the pieces and bake for another 10 minutes.
  7. Melt butter in a bowl, mixing it with the buffalo sauce.
  8. Transfer cauliflower to a bowl, pour the buffalo sauce over, and toss gently to coat.
  9. Return to the baking sheet and bake for an additional 5-7 minutes to set the sauce.
  10. Serve hot, garnished with parsley and accompanied by dressing and celery sticks, if desired.

Notes

For extra crispiness, sprinkle additional cornstarch on the batter-coated florets before baking. These bites are easy to customize with different spices or sauces.
