Ingredients

  • 2 cans white beans, drained and rinsed (cannellini or great northern)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups kale or spinach, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for one more minute until fragrant.
  4. Incorporate the white beans, vegetable broth, thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil.
  5. Reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld.
  6. Add the chopped kale or spinach, cooking for an additional 5 minutes until wilted.
  7. Taste and adjust seasoning as needed.
  8. Serve hot, ideally with a slice of crusty bread for dipping.

Notes

For added flavor, consider adding a bay leaf during simmering and remove before serving. This soup freezes well for up to 3 months.
