Ingredients

- 2 cans white beans, drained and rinsed (cannellini or great northern)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups kale or spinach, chopped
- 1 tablespoon olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for one more minute until fragrant.
- Incorporate the white beans, vegetable broth, thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld.
- Add the chopped kale or spinach, cooking for an additional 5 minutes until wilted.
- Taste and adjust seasoning as needed.
- Serve hot, ideally with a slice of crusty bread for dipping.
Notes
For added flavor, consider adding a bay leaf during simmering and remove before serving. This soup freezes well for up to 3 months.
