Description

Ingredients

  • 4 cups cooked and shredded chicken (rotisserie chicken works well!)
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (plus an additional ½ cup for topping)
  • 2 cups mixed vegetables (optional but recommended)
  • 1 small onion, finely chopped
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers (like Ritz)
  • ½ cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, 1 cup of cheddar cheese, chopped onions, and mixed vegetables (if using). Season with salt and pepper to taste.
  3. Transfer the mixture into a greased casserole dish.
  4. In a separate bowl, mix the crushed crackers with the melted butter. Sprinkle this mixture over the casserole, using the extra ½ cup of cheddar cheese for topping.
  5. Bake for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
