- 4 cups cooked and shredded chicken (rotisserie chicken works well!)
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese (plus an additional ½ cup for topping)
- 2 cups mixed vegetables (optional but recommended)
- 1 small onion, finely chopped
- Salt and pepper to taste
- 1 cup crushed buttery crackers (like Ritz)
- ½ cup melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, 1 cup of cheddar cheese, chopped onions, and mixed vegetables (if using). Season with salt and pepper to taste.
- Transfer the mixture into a greased casserole dish.
- In a separate bowl, mix the crushed crackers with the melted butter. Sprinkle this mixture over the casserole, using the extra ½ cup of cheddar cheese for topping.
- Bake for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
Notes
Serve with a light green salad or garlic bread. Store leftovers in an airtight container in the fridge for up to three days or freeze for later use.
