- 4 large eggs
- 1/2 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 cup pitted cherries (fresh or canned)
- 1/2 cup chocolate ganache (store-bought or homemade)
- Chocolate curls for garnish
Instructions
- Preheat your oven to 350°F (175°C). Prepare a jelly roll pan by lining it with parchment paper.
- In a large mixing bowl, beat the eggs and granulated sugar together until the mixture thickens and becomes pale.
- Sift together the cocoa powder and salt, then gently fold it into the egg mixture. Stir in the vanilla extract until combined.
- Pour the batter into your prepared pan, spreading it evenly with a spatula.
- Bake for 12-15 minutes, or until the cake springs back lightly when touched.
- Remove the cake from the oven and let it cool for a few minutes.
- Carefully roll the cake, still attached to the parchment paper, starting from one of the short sides. Let it cool completely in this rolled-up shape.
- While the cake is cooling, whip the heavy cream and powdered sugar in a separate bowl until soft peaks form.
- Once the cake has cooled, unroll it gently, then spread the whipped cream over the surface. Sprinkle the pitted cherries evenly.
- Roll the cake back up (without the parchment), placing it seam-side down on a serving platter.
- Pour the chocolate ganache over the top, letting it cascade down the sides. Decorate with chocolate curls and any extra cherries.
- Slice up this beauty and serve!
Notes
Best enjoyed chilled. Pair with vanilla ice cream or extra whipped cream for an indulgent touch.
