Description

Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 cup pitted cherries (fresh or canned)
  • 1/2 cup chocolate ganache (store-bought or homemade)
  • Chocolate curls for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a jelly roll pan by lining it with parchment paper.
  2. In a large mixing bowl, beat the eggs and granulated sugar together until the mixture thickens and becomes pale.
  3. Sift together the cocoa powder and salt, then gently fold it into the egg mixture. Stir in the vanilla extract until combined.
  4. Pour the batter into your prepared pan, spreading it evenly with a spatula.
  5. Bake for 12-15 minutes, or until the cake springs back lightly when touched.
  6. Remove the cake from the oven and let it cool for a few minutes.
  7. Carefully roll the cake, still attached to the parchment paper, starting from one of the short sides. Let it cool completely in this rolled-up shape.
  8. While the cake is cooling, whip the heavy cream and powdered sugar in a separate bowl until soft peaks form.
  9. Once the cake has cooled, unroll it gently, then spread the whipped cream over the surface. Sprinkle the pitted cherries evenly.
  10. Roll the cake back up (without the parchment), placing it seam-side down on a serving platter.
  11. Pour the chocolate ganache over the top, letting it cascade down the sides. Decorate with chocolate curls and any extra cherries.
  12. Slice up this beauty and serve!

Notes

Best enjoyed chilled. Pair with vanilla ice cream or extra whipped cream for an indulgent touch.
