Ingredients

  • 2 cups eggnog
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon butter

Instructions

  1. In a medium saucepan, whisk together the eggnog, sugar, cornstarch, and salt.
  2. Place the saucepan over medium heat. Cook, stirring continuously, until the mixture thickens and bubbles.
  3. While the pudding thickens, whisk the egg yolks in a separate bowl. Gradually add a few spoonfuls of the hot pudding mixture to the yolks to temper them.
  4. Return the tempered yolk mixture to the saucepan and continue cooking for an additional 2 minutes, stirring well.
  5. Remove from heat and stir in the vanilla extract, ground nutmeg, and butter until melted and smooth.
  6. Pour the pudding into individual serving dishes and let cool. Chill in the refrigerator before serving.

Notes

Top with whipped cream, garnish with nutmeg or cinnamon, serve with gingerbread cookies or fresh berries for a delicious presentation.
