A delightful and creamy mango pudding that captures the tropical flavors of ripe mangoes, perfect for any occasion.
Ingredients

- 12 oz fully ripened and tender mangoes, peeled, pitted, and diced
- 2 tbsp cold water
- 1.5 tbsp gelatin or 1.5 tsp agar agar powder (for a vegan version)
- 1.5 tbsp white granulated sugar
- 0.54 cups full-fat coconut milk (or substitute with evaporated milk, heavy cream, or evaporated coconut milk)
- 4 tbsp evaporated milk or coconut milk (for a vegan version)
Instructions
- Blend the mango chunks in a blender or food processor until smooth. Strain for an ultra-smooth texture if desired.
- In a separate bowl, mix the cold water with the gelatin (or agar agar) until well combined and allow it to bloom for a few minutes.
- In a mixing bowl, combine the mango puree, sugar, and coconut milk. Whisk until smooth and well-incorporated.
- Gently heat the mixture in a pot over low heat, stirring continuously until the gelatin dissolves completely. Do not boil.
- Pour the mixture into serving bowls or molds and refrigerate for at least 6 hours or ideally overnight until it sets firmly.
- Serve chilled with additional evaporated milk or coconut milk on top for a creamy finish.
Notes
Garnish with fresh fruit slices, toasted coconut flakes, or a sprig of mint for extra flavor and presentation. Store leftovers covered in the fridge for about 3-5 days.
