Description

A soft, fluffy milk bread loaf perfect for breakfast, sandwiches, or as a delightful side for any meal.


Ingredients

  • 500 g bread flour (3¾ cups)
  • 40 g sugar (3 tbsp)
  • tsps instant yeast
  • 225 g cold water (a little less than 1 cup)
  • 115 g cold milk (½ cup)
  • 9 g sea salt (1½ tsp)
  • 25 g unsalted butter (1¾ tbsp)
  • Butter for coating the pan and brushing the bread
  • Flour for coating the pan

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, whisk together the bread flour, sugar, instant yeast, and sea salt until evenly combined.
  2. Combine Wet Ingredients: In a separate bowl, mix the cold water, cold milk, and softened butter.
  3. Form the Dough: Pour the wet mixture into the dry ingredients. Stir until a shaggy dough forms.
  4. Knead the Dough: Transfer the dough onto a floured surface and knead for about 10 minutes or until it’s smooth and elastic.
  5. First Rise: Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place until doubled in size, approximately 1 – 2 hours.
  6. Shape the Loaf: Once risen, punch down the dough gently to release the air. Shape it into a loaf by flattening the dough and rolling it tightly.
  7. Second Rise: Place the shaped loaf into a greased pan, cover it, and allow it to rise again until it doubles, about 30 – 45 minutes.
  8. Preheat the Oven: While the loaf is rising, preheat your oven to 180°C (356°F).
  9. Bake: Brush the top of the loaf with melted butter, then place it in the oven. Bake for 25 – 30 minutes until golden brown and it sounds hollow when tapped.
  10. Cool: Once baked, remove the loaf from the oven and let it cool slightly before transferring it to a wire rack.

Notes

Feel free to substitute whole milk for alternative milks like almond or oat milk. For a dairy-free version, use non-dairy milk and butter.
