- 2 chicken breasts
- 4 cups chicken broth (homemade or store-bought)
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup green beans, chopped
- 1 cup spinach or kale
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, add the chicken breasts and cover them with chicken broth. Bring to a boil, then reduce to a simmer. Cook for about 20-25 minutes until the chicken is fully cooked.
- Carefully remove the chicken from the pot and shred it. Set aside.
- In the same pot, add the diced carrots, celery, chopped onion, and minced garlic. Sauté for 5-7 minutes until the vegetables soften.
- Return the shredded chicken to the pot along with the chopped green beans, thyme, rosemary, salt, and pepper. Stir to combine.
- Allow the soup to simmer for another 10-15 minutes to meld the flavors.
- Stir in the spinach or kale until it wilts. Serve hot, optionally garnishing with fresh herbs.
Notes
For richer flavor, consider using homemade chicken broth. You can also customize by adding different herbs or spices.
