Ingredients

- 2 poached chicken breasts, shredded
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup fresh spinach
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat.
- Add the chopped onion, diced carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring it to a boil.
- Add the shredded chicken, thyme, rosemary, salt, and pepper to taste.
- Reduce the heat and let it simmer for about 15-20 minutes.
- Just before serving, stir in the fresh spinach until wilted.
Notes
For added richness, consider adding a touch of cream or cheese just before serving. Customize the vegetables based on your preference.
