  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup fresh spinach
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a little oil over medium heat.
  2. Add the chopped onion, diced carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth and bring it to a boil.
  5. Add the shredded chicken, thyme, rosemary, salt, and pepper to taste.
  6. Reduce the heat and let it simmer for about 15-20 minutes.
  7. Just before serving, stir in the fresh spinach until wilted.
