Description

A simple and hearty dish that captures the bold flavors of enchiladas without the hassle of rolling tortillas. Layers of corn tortillas, seasoned beef, beans, cheese, and enchilada sauce are baked to perfection.


Ingredients

  • 12 corn tortillas
  • 1 pound ground beef
  • 2 cups beans (black or pinto)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) enchilada sauce
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground beef, onion, bell pepper, and garlic until the beef is browned and the vegetables are tender. Season with cumin, chili powder, and salt.
  3. In a baking dish, layer corn tortillas, half of the meat mixture, cheese, and enchilada sauce. Repeat the layers.
  4. Top with remaining cheese and enchilada sauce.
  5. Cover with foil and bake for 25 minutes.
  6. Remove foil and bake for an additional 15 minutes until bubbly and golden.
  7. Let cool for a few minutes before serving.
