- 2 cups all-purpose flour
- 1 cup fresh cranberries, halved
- 1 cup granulated sugar
- 1/2 cup orange juice
- 1/4 cup butter, melted
- 2 large eggs
- 1 tablespoon orange zest
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup powdered sugar (for glaze)
- 1–2 tablespoons orange juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan to prevent sticking.
- In a mixing bowl, whisk together the flour, sugar, baking soda, and salt.
- In another bowl, combine the eggs, orange juice, melted butter, and orange zest, whisking until well mixed.
- Gradually add the wet ingredients into the dry ingredients. Stir until just combined; avoid overmixing. Gently fold in the halved cranberries.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- For the glaze, mix powdered sugar with orange juice until smooth and drizzle over the cooled bread.
Notes
Wrap the bread in plastic wrap or store in an airtight container for up to four days. For longer storage, consider freezing.
