Description
A delicious quesadilla packed with shredded chicken, crispy bacon, and gooey cheese, all drizzled with zesty ranch dressing.
Ingredients

- 4 large flour tortillas
- 2 cups cooked chicken (shredded)
- 8 slices bacon (cooked and crumbled)
- 2 cups Mexican cheese blend (shredded)
- 1/2 cup ranch dressing
- 1 cup tomatoes (diced)
- 1/4 cup red onion (finely chopped)
- 2 tbsp fresh cilantro (chopped)
- 2 tbsp butter (for cooking)
Instructions
- In a bowl, combine the shredded chicken with ranch dressing. Stir well to combine.
- Add in the crumbled bacon, diced tomatoes, chopped onion, and cilantro. Mix until evenly distributed.
- Heat a skillet over medium heat and melt the butter.
- On one half of a tortilla, sprinkle a layer of cheese, then add a generous portion of the chicken mixture. Top with more cheese.
- Fold the tortilla in half, pressing gently.
- Place the quesadilla in the skillet and cook for about 2-3 minutes until golden brown. Flip and repeat on the other side.
- Once both sides are crispy and the cheese is melted, remove from the skillet and cut into wedges.
Notes
Serve with extra ranch dressing, salsa, guacamole, or fresh jalapeños for added flavor.
