Ingredients

  • 4 boneless skinless chicken breasts (approx. 170–200g each)
  • 1 tbsp olive oil (for sautéing)
  • 2 cups baby spinach (about 60g)
  • 3 garlic cloves, minced
  • ½ cup crumbled feta cheese (about 75g)
  • ¼ cup cream cheese, softened (about 60g)
  • ½ tsp dried oregano
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for pan-searing)
  • Toothpicks or kitchen twine for sealing

Instructions

  1. In a skillet, heat 1 tbsp olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
  2. Add baby spinach to the skillet and cook until it wilts, about 2–3 minutes.
  3. Transfer the spinach mixture to a bowl.
  4. Stir in crumbled feta, softened cream cheese, dried oregano, salt, and black pepper until well combined.
  5. Slice each chicken breast to create a deep pocket without cutting all the way through.
  6. Fill the pockets of the chicken breasts with the spinach-feta mixture.
  7. Use toothpicks or kitchen twine to seal the stuffed chicken.
  8. Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear the stuffed chicken for 2–3 minutes per side until golden brown.
  9. Transfer to a baking dish and bake in a preheated oven at 375°F (190°C) for 20–25 minutes until internal temperature reaches 165°F (74°C).
  10. Let rest for 5 minutes before slicing and serving.
