- 4 boneless skinless chicken breasts (approx. 170–200g each)
- 1 tbsp olive oil (for sautéing)
- 2 cups baby spinach (about 60g)
- 3 garlic cloves, minced
- ½ cup crumbled feta cheese (about 75g)
- ¼ cup cream cheese, softened (about 60g)
- ½ tsp dried oregano
- ½ tsp salt (or to taste)
- ¼ tsp black pepper
- 1 tbsp olive oil (for pan-searing)
- Toothpicks or kitchen twine for sealing
Instructions
- In a skillet, heat 1 tbsp olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add baby spinach to the skillet and cook until it wilts, about 2–3 minutes.
- Transfer the spinach mixture to a bowl.
- Stir in crumbled feta, softened cream cheese, dried oregano, salt, and black pepper until well combined.
- Slice each chicken breast to create a deep pocket without cutting all the way through.
- Fill the pockets of the chicken breasts with the spinach-feta mixture.
- Use toothpicks or kitchen twine to seal the stuffed chicken.
- Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear the stuffed chicken for 2–3 minutes per side until golden brown.
- Transfer to a baking dish and bake in a preheated oven at 375°F (190°C) for 20–25 minutes until internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before slicing and serving.

Serve with roasted vegetables, fresh salad, or grains like quinoa or rice for a complete meal.
