- 1 lb thinly sliced ribeye or sirloin beef
- 8 oz provolone cheese, sliced
- 1 cup mixed bell peppers, chopped
- 1 medium sweet onion, chopped
- 2 tbsp extra virgin olive oil
- 4 low-carb tortillas
Instructions
- Prep your ingredients by slicing the beef into thin strips and chopping the bell peppers and onion.
- In a skillet over medium heat, heat the olive oil. Add chopped onions and bell peppers and sauté until softened, about 5-7 minutes.
- Increase heat to medium-high, add sliced beef, season with salt and pepper, and cook until browned, about 3-5 minutes.
- Reduce heat to low, layer provolone cheese over beef mixture, and allow to melt completely.
- Spoon the cheesy beef mixture onto each tortilla and roll them up tightly.
- Return roll-ups seam-side down to the skillet and pan-fry for 3-4 minutes, turning until golden brown on all sides.
Notes
Store leftovers in an airtight container in the fridge for up to three days. For freezing, wrap each roll-up tightly in plastic wrap and store in a freezer-safe bag.
