Delicious low-carb roll-ups packed with the flavors of classic Philly cheesesteaks, featuring beef, cheese, and sautéed veggies wrapped in a tortilla.

- 1 lb thinly sliced ribeye or sirloin beef
- 8 oz provolone cheese, sliced
- 1 cup mixed bell peppers, chopped
- 1 medium sweet onion, chopped
- 2 tbsp extra virgin olive oil
- 4 low-carb tortillas
Instructions
- Prep your ingredients: slice the beef into thin strips and chop your bell peppers and onion.
- Heat olive oil in a skillet over medium heat. Add the onions and bell peppers, sautéing until they soften, about 5–7 minutes.
- Increase the heat to medium-high and add the sliced beef. Season with salt and pepper to taste and cook until the beef is browned, around 3–5 minutes.
- Lower the heat to low, then layer provolone cheese over the beef mixture. Allow it to melt completely.
- Spoon the beef-cheese mixture onto each tortilla and roll them tightly.
- Return the rolled-up tortillas, seam-side down, to the skillet, cooking until golden brown on all sides, for about 3–4 minutes total.
Notes
Feel free to swap the cheese for mozzarella or use low-carb wraps for different flavors. Add spices like smoked paprika for variety.
