- 1 lb thinly sliced ribeye or sirloin beef
- 8 oz provolone cheese, sliced
- 1 cup mixed bell peppers, chopped
- 1 medium sweet onion, chopped
- 2 tbsp extra virgin olive oil
- 4 low-carb tortillas
Instructions
- Start by gathering and prepping your ingredients. Slice the beef into thin strips and chop the bell peppers and onion.
- In a skillet, heat olive oil over medium heat. Add the chopped onions and bell peppers; sauté until softened, around 5-7 minutes.
- Increase the heat to medium-high. Add the sliced beef and season it with salt and pepper. Cook until browned, approximately 3-5 minutes.
- Reduce the heat to low, then lay the provolone slices over the beef mixture, allowing them to melt completely.
- Spoon the savory beef and cheese mixture onto each tortilla, rolling them tightly.
- Finally, return the roll-ups seam-side down to the skillet. Cook for about 3-4 minutes, turning to achieve a golden brown on all sides.
Notes
For an added twist, consider swapping provolone with mozzarella or a spicy Pepper Jack. These roll-ups can also be made dairy-free with vegan cheese alternatives.
