  • 8 oz provolone cheese, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 low-carb tortillas

Instructions

  1. Start by gathering and prepping your ingredients. Slice the beef into thin strips and chop the bell peppers and onion.
  2. In a skillet, heat olive oil over medium heat. Add the chopped onions and bell peppers; sauté until softened, around 5-7 minutes.
  3. Increase the heat to medium-high. Add the sliced beef and season it with salt and pepper. Cook until browned, approximately 3-5 minutes.
  4. Reduce the heat to low, then lay the provolone slices over the beef mixture, allowing them to melt completely.
  5. Spoon the savory beef and cheese mixture onto each tortilla, rolling them tightly.
