Ingredients

- 2 lbs potatoes (Russet or Yukon Gold)
- 7 tbsp cornstarch or 10 tbsp flour
- 1/3 cup + 1/4 cup Parmesan cheese (grated)
- 1 tsp garlic granules (or 2 cloves minced garlic)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp fresh parsley (chopped)
- Cooking oil (for frying)
Instructions
- Cook the Potatoes: Boil quartered potatoes in salted water until fork-tender, about 15-20 minutes, then drain and allow to dry for 5-8 minutes.
- Mash the Potatoes: Mash the potatoes until smooth.
- Add Flavorings: Stir in cornstarch or flour, 1/3 cup Parmesan, garlic granules, salt, and pepper until well combined.
- Shape the Balls: Form the mixture into 1-inch balls; moisten your hands if needed.
- Heat the Oil: Heat oil to 350°F (175°C); test with a potato piece to check readiness.
- Fry the Balls: Fry in small batches for 5-7 minutes until golden brown and crispy, avoiding overcrowding.
- Drain and Season: Transfer fried balls to a wire rack lined with paper towels and toss with remaining Parmesan, parsley, and additional salt if desired.
- Serve Hot: Best enjoyed fresh out of the fryer.
Notes
Serve with dips like marinara or aioli. Can be stored in the refrigerator for up to 3 days or frozen for a month.
