Ingredients

  • 4 small to medium chicken breasts (or 2 large halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese, grated
  • 1 cup spinach, chopped (optional)

Instructions

  1. Generously season the chicken breasts with salt and pepper on both sides.
  2. In a skillet, heat the olive oil over medium-high heat.
  3. Add the chicken and sear for 5-6 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
  4. Lower the heat, add minced garlic to the pan, and sauté for about 30 seconds until fragrant.
  5. Pour in the cream while stirring continuously.
  6. Stir in the Italian seasoning and parmesan cheese until smooth. Add spinach if desired and let simmer for 2-3 minutes.
  7. Return the cooked chicken to the pan, spooning the garlic sauce over the top. Simmer for another minute before removing from heat.

Notes

For a lighter dish, substitute cream with coconut cream. Ensure chicken is pounded to even thickness for uniform cooking.
