- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Generously season the chicken breasts with salt and pepper on both sides.
- In a skillet, heat the olive oil over medium-high heat.
- Add the chicken and sear for 5-6 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
- Lower the heat, add minced garlic to the pan, and sauté for about 30 seconds until fragrant.
- Pour in the cream while stirring continuously.
- Stir in the Italian seasoning and parmesan cheese until smooth. Add spinach if desired and let simmer for 2-3 minutes.
- Return the cooked chicken to the pan, spooning the garlic sauce over the top. Simmer for another minute before removing from heat.
Notes
For a lighter dish, substitute cream with coconut cream. Ensure chicken is pounded to even thickness for uniform cooking.
