Ingredients

  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko)
  • 2 tablespoons fresh basil, chopped
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow bowl, mix the grated Parmesan cheese, breadcrumbs, and chopped basil.
  3. In another bowl, beat the eggs and season with salt and pepper.
  4. Dip each chicken breast into the egg mixture, allowing excess to drip off, then thoroughly coat with the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat and fry the chicken cutlets for about 4-5 minutes per side until golden brown.
  6. Transfer the cutlets to a baking sheet and bake in the preheated oven for an additional 10-15 minutes, or until the chicken is cooked through.
