    • ¾ tsp smoked paprika
    • 2 eggs
    • ¼ tsp salt
    • ¾ cup panko crumbs
    • ¼ cup breadcrumbs

    • ½ tsp ground black pepper
    • ½ tsp sea salt
    • ½ tsp dried oregano
    • 1 tsp garlic powder
    • ¼ cup Parmesan cheese (freshly grated)

    • 2 romaine hearts (chopped)
    • 12 French baguettes
    • Parmesan cheese (for sprinkling)

Instructions

  1. Prepare the dressing: In a bowl, mix together the mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, black pepper, and sea salt until smooth. Set aside about 4 to 5 tablespoons for the salad, then refrigerate both the dressing and the salad components separately.
  2. Prepare the chicken: Lay the chicken cutlets on a cutting board. If they vary in thickness, pound them gently to an even thickness. Season both sides with salt and pepper.
  3. Set up the breading station: Arrange three shallow plates. In the first, combine the flour, salt, and smoked paprika. In the second, whisk eggs with a pinch of salt. In the third, mix the panko, breadcrumbs, parsley, black pepper, sea salt, oregano, garlic powder, and grated Parmesan.
  4. Bread the chicken: Heat oil in a frying pan over medium heat. Dredge each chicken cutlet in the flour mixture, shake off excess, dip in the eggs, and then coat in the breadcrumb mix.
  5. Fry the chicken: Once the oil is hot, carefully place the chicken in the pan. Cook until golden brown on one side (about 4-5 minutes), then flip and cook the other side until crispy and cooked through. Transfer to a wire rack to drain excess oil.
  6. Assemble the sandwiches: Slice the baguettes into 5-inch pieces and cut them open lengthwise. Spread a layer of the reserved Caesar dressing inside, place a crispy chicken cutlet on top, followed by a generous heap of the Caesar salad. Top with extra grated Parmesan, close the sandwiches, and serve immediately.
