- ½ cup full-fat mayonnaise
- 3 tbsp Greek yogurt
- 1 tsp Dijon mustard

- 2 tbsp lemon juice

- 1–2 garlic cloves (minced)
- ¼ tsp black pepper
- Pinch sea salt
- For the chicken:
- 5 chicken cutlets
- Sea salt (to taste)
- Ground black pepper (to taste)
- Oil (for frying)
- For the breading:
- ⅓ cup all-purpose flour
- ½ tsp salt
- ¾ tsp smoked paprika
- 2 eggs
- ¼ tsp salt
- ¾ cup panko crumbs
- ¼ cup breadcrumbs
- 1 tsp dried parsley
- ½ tsp ground black pepper
- ½ tsp sea salt
- ½ tsp dried oregano
- 1 tsp garlic powder
- ¼ cup Parmesan cheese (freshly grated)
- For assembly:
- 2 romaine hearts (chopped)
- 1–2 French baguettes
- Parmesan cheese (for sprinkling)
Instructions
- Prepare the dressing: In a bowl, mix together the mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, black pepper, and sea salt until smooth. Set aside about 4 to 5 tablespoons for the salad, then refrigerate both the dressing and the salad components separately.
- Prepare the chicken: Lay the chicken cutlets on a cutting board. If they vary in thickness, pound them gently to an even thickness. Season both sides with salt and pepper.
- Set up the breading station: Arrange three shallow plates. In the first, combine the flour, salt, and smoked paprika. In the second, whisk eggs with a pinch of salt. In the third, mix the panko, breadcrumbs, parsley, black pepper, sea salt, oregano, garlic powder, and grated Parmesan.
- Bread the chicken: Heat oil in a frying pan over medium heat. Dredge each chicken cutlet in the flour mixture, shake off excess, dip in the eggs, and then coat in the breadcrumb mix.
- Fry the chicken: Once the oil is hot, carefully place the chicken in the pan. Cook until golden brown on one side (about 4-5 minutes), then flip and cook the other side until crispy and cooked through. Transfer to a wire rack to drain excess oil.
- Assemble the sandwiches: Slice the baguettes into 5-inch pieces and cut them open lengthwise. Spread a layer of the reserved Caesar dressing inside, place a crispy chicken cutlet on top, followed by a generous heap of the Caesar salad. Top with extra grated Parmesan, close the sandwiches, and serve immediately.
