  • 2 cups shredded cooked chicken (preferably rotisserie)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 810 small corn or flour tortillas
  • Cooking spray or olive oil for brushing

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, toss together the shredded chicken, cheese, salsa, chili powder, cumin, garlic powder, onion powder, and a sprinkle of salt and pepper until well combined.
  3. Warm the tortillas in the microwave for about 10-15 seconds so they’re easy to roll.
  4. Take about 2 tablespoons of the chicken mixture and spoon it onto each tortilla. Roll them up tightly, seam-side down.
  5. Arrange the taquitos on a baking sheet lined with parchment paper.
  6. Lightly spray or brush the tops with cooking spray or olive oil.
  7. Bake for 15-20 minutes, or until golden brown and crispy.

Notes

For best results, avoid overstuffing the tortillas and ensure chicken is thoroughly shredded.
