- 2 cups shredded cooked chicken (preferably rotisserie)
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/2 cup salsa
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 8–10 small corn or flour tortillas
- Cooking spray or olive oil for brushing
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, toss together the shredded chicken, cheese, salsa, chili powder, cumin, garlic powder, onion powder, and a sprinkle of salt and pepper until well combined.
- Warm the tortillas in the microwave for about 10-15 seconds so they’re easy to roll.
- Take about 2 tablespoons of the chicken mixture and spoon it onto each tortilla. Roll them up tightly, seam-side down.
- Arrange the taquitos on a baking sheet lined with parchment paper.
- Lightly spray or brush the tops with cooking spray or olive oil.
- Bake for 15-20 minutes, or until golden brown and crispy.
Notes
For best results, avoid overstuffing the tortillas and ensure chicken is thoroughly shredded.
