These spooky deviled eggs are not only fun and visually appealing but also a delicious and healthier alternative for your Halloween parties.

Ingredients

Scale
  • 6 large eggs
  • 2½ tbsp mayonnaise
  • 1 tsp yellow mustard
  • 1 tsp white vinegar or lemon juice
  • Salt and black pepper, to taste
  • Green food coloring (gel or liquid)
  • Red food coloring or ketchup (for veins)
  • 6 black or green olives, sliced into rounds
  • Garlic powder, paprika, or hot sauce (your choice)
  • Fresh chives or parsley for garnish
  • Sweet relish for tang

Instructions

  1. Boil the eggs in a pot covered with water. Bring to a gentle boil, cover, turn off the heat, and let sit for 12 minutes.
  2. Transfer the eggs to an ice bath to cool.
  3. Peel the cooled eggs carefully.
  4. Cut each egg in half lengthwise and scoop yolks into a bowl.
  5. Mix yolks with mayonnaise, mustard, vinegar, salt, and pepper. Add green food coloring until desired shade is achieved.
  6. Use a piping bag to fill the egg whites with the yolk mixture.
  7. Place olive slices in the center of each yolk mound for the pupils.
  8. Draw veins with a toothpick dipped in red food coloring or ketchup.
  9. Chill until ready to serve.

Notes

You can prepare the yolk mixture a day ahead of time. If decorated with veins, do so shortly before serving for best presentation.
