Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can green chilies
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot or slow cooker, combine all ingredients except for the heavy cream and cilantro.
  2. If using the stovetop, bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes.
  3. For a slow cooker, cook on low for 6-8 hours.
  4. If you’re short on time, use an Instant Pot—cook on high pressure for 10 minutes, then quick-release.
  5. Just before serving, stir in the heavy cream.
  6. Garnish with fresh cilantro and serve.

Notes

Feel free to substitute heavy cream with half-and-half for a lighter option. Sautéing onions and garlic beforehand enhances flavor.
