Ingredients

- 2 cups cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can green chilies
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot or slow cooker, combine all ingredients except for the heavy cream and cilantro.
- If using the stovetop, bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes.
- For a slow cooker, cook on low for 6-8 hours.
- If you’re short on time, use an Instant Pot—cook on high pressure for 10 minutes, then quick-release.
- Just before serving, stir in the heavy cream.
- Garnish with fresh cilantro and serve.
Notes
Feel free to substitute heavy cream with half-and-half for a lighter option. Sautéing onions and garlic beforehand enhances flavor.
