Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 6 cups vegetable broth
  • 1 cup heavy cream (or coconut cream for a vegan option)
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the diced carrots and celery, cooking for an additional 5-7 minutes until softened.
  5. Pour in the vegetable broth and bring to a gentle simmer.
  6. Once simmering, stir in the heavy cream (or coconut cream) and allow it to warm through.
  7. Gently add the gnocchi; they’ll be ready in about 2-3 minutes.
  8. Finally, mix in the fresh spinach until wilted.
  9. Season with salt and pepper to taste, and enjoy!

Notes

Garnish with grated Parmesan cheese or nutritional yeast for a vegan option. Serve with garlic bread or salad.
