Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 6 cups vegetable broth
- 1 cup heavy cream (or coconut cream for a vegan option)
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the diced carrots and celery, cooking for an additional 5-7 minutes until softened.
- Pour in the vegetable broth and bring to a gentle simmer.
- Once simmering, stir in the heavy cream (or coconut cream) and allow it to warm through.
- Gently add the gnocchi; they’ll be ready in about 2-3 minutes.
- Finally, mix in the fresh spinach until wilted.
- Season with salt and pepper to taste, and enjoy!
Notes
Garnish with grated Parmesan cheese or nutritional yeast for a vegan option. Serve with garlic bread or salad.
