Description

Ingredients

  • 8 oz cheese ravioli
  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the ravioli according to package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat, add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the halved cherry tomatoes and sauté until they begin to soften, around 2-3 minutes.
  4. Add the spinach to the skillet and cook until wilted, about 2 minutes.
  5. Pour in the heavy cream and allow it to come to a simmer, then stir in the grated Parmesan cheese until it melts and the sauce is smooth.
  6. Add the cooked ravioli to the skillet and gently toss until well-coated with the creamy sauce.
  7. Taste and season with salt and pepper according to preference.
  8. Transfer to plates and garnish with fresh basil if desired. Serve hot and enjoy!

Notes

Feel free to substitute fresh spinach with kale or frozen spinach. Pair with a light side salad or garlic bread.
