Ingredients

- 8 oz cheese ravioli
- 2 cups spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the ravioli according to package instructions, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat, add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the halved cherry tomatoes and sauté until they begin to soften, around 2-3 minutes.
- Add the spinach to the skillet and cook until wilted, about 2 minutes.
- Pour in the heavy cream and allow it to come to a simmer, then stir in the grated Parmesan cheese until it melts and the sauce is smooth.
- Add the cooked ravioli to the skillet and gently toss until well-coated with the creamy sauce.
- Taste and season with salt and pepper according to preference.
- Transfer to plates and garnish with fresh basil if desired. Serve hot and enjoy!
Notes
Feel free to substitute fresh spinach with kale or frozen spinach. Pair with a light side salad or garlic bread.
