- 1 lb cheese ravioli (fresh or frozen)
- 1 tbsp olive oil
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes (chopped)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Preheat a large skillet over medium heat and add the olive oil.
- Sauté the minced garlic for about 30 seconds until fragrant.
- Add the cherry and sun-dried tomatoes, cooking for an additional 2–3 minutes until softened.
- Pour in the heavy cream and chicken broth, stirring well to combine.
- Add the grated Parmesan cheese along with salt and pepper. Let the mixture simmer until it thickens slightly.
- Fold in the fresh spinach and allow it to wilt.
- Gently mix in the cooked ravioli and let everything simmer together briefly.
- Serve warm, garnished with extra Parmesan if desired.
Notes
For an elevated dining experience, pair with a light arugula salad and garlic bread. Substitute heavy cream for half-and-half or coconut cream for a lighter option.
