Description

Ingredients

  • 1 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat a large skillet over medium heat and add the olive oil.
  2. Sauté the minced garlic for about 30 seconds until fragrant.
  3. Add the cherry and sun-dried tomatoes, cooking for an additional 2–3 minutes until softened.
  4. Pour in the heavy cream and chicken broth, stirring well to combine.
  5. Add the grated Parmesan cheese along with salt and pepper. Let the mixture simmer until it thickens slightly.
  6. Fold in the fresh spinach and allow it to wilt.
  7. Gently mix in the cooked ravioli and let everything simmer together briefly.
  8. Serve warm, garnished with extra Parmesan if desired.

Notes
