Description

Ingredients

  • 1 package fresh or frozen cheese-filled ravioli
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  2. Toss in halved cherry tomatoes and cook until they start to soften. Stir in fresh spinach and allow it to wilt.
  3. Pour in the heavy cream and let it simmer. Stir in the grated Parmesan cheese, adjusting the consistency with salt and pepper.
  4. Cook the ravioli according to package directions, drain, and add to the skillet. Toss until well-coated.
  5. Finish with fresh basil on top before serving.

Notes

For a lighter sauce, substitute half the heavy cream with vegetable broth. Mix in different cheeses for variation.
