A comforting and indulgent pasta dish featuring cheese-stuffed tortellini and a silky sauce made from eggs, parmesan, and crispy pancetta.
Ingredients
- Cheese-stuffed tortellini (fresh or frozen)
- Eggs (large, preferably free-range)
- Grated parmesan cheese
- Pancetta (or guanciale)
- Black pepper (freshly cracked)
- Salt (to taste)
- Olive oil (for cooking)
- Garlic (optional)
Instructions
- Cook the tortellini according to package instructions until al dente. Reserve about ½ cup of the pasta water before draining.
- Fry the pancetta in a pan over medium heat until crispy. Remove and let drain on paper towels.
- Whisk together the eggs, grated parmesan, and black pepper in a mixing bowl until well combined.
- Combine the hot tortellini with the pancetta in the pan, then add the egg mixture, stirring quickly. If it’s too thick, add a little reserved pasta water to achieve your desired consistency.
- Serve warm, garnished with additional parmesan and a sprinkle of black pepper.
Notes
To elevate your dish, serve with a light side salad or garlic bread. Add fresh herbs for extra flavor.
