Description

Ingredients

  • Cheese-stuffed tortellini (fresh or frozen)
  • Eggs (large, preferably free-range)
  • Grated parmesan cheese
  • Pancetta (or guanciale)
  • Black pepper (freshly cracked)
  • Salt (to taste)
  • Olive oil (for cooking)
  • Garlic (optional)

Instructions

  1. Cook the tortellini according to package instructions until al dente. Reserve about ½ cup of the pasta water before draining.
  2. Fry the pancetta in a pan over medium heat until crispy. Remove and let drain on paper towels.
  3. Whisk together the eggs, grated parmesan, and black pepper in a mixing bowl until well combined.
  4. Combine the hot tortellini with the pancetta in the pan, then add the egg mixture, stirring quickly. If it’s too thick, add a little reserved pasta water to achieve your desired consistency.
  5. Serve warm, garnished with additional parmesan and a sprinkle of black pepper.

Notes
