- 8 oz spaghetti or fettuccine
- 1 cup ripe tomatoes, diced
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add your spaghetti or fettuccine and cook according to package instructions until al dente. Drain and set aside.
- Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté it until golden brown, about 1-2 minutes. Be careful not to burn it!
- Simmer the Tomatoes: Toss in the diced tomatoes, along with salt and pepper. Let this simmer for about 5 minutes; the tomatoes should break down slightly.
- Add the Cream: Lower the heat and pour in the heavy cream. Stir until everything is well combined and creamy.
- Combine with Pasta: Add the cooked pasta to the skillet, tossing it in the sauce until it’s evenly coated.
- Finish and Serve: Remove from heat and serve immediately, garnished with fresh chopped basil and a sprinkle of grated Parmesan cheese if desired.
Notes
Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat by adding a splash of cream or milk.
