Ingredients

- 2 cups shredded rotisserie chicken
- 8 oz pasta (penne or fettuccine)
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 cups fresh spinach
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Sauté the minced garlic for about one minute, until fragrant.
- Pour in the heavy cream and chicken broth. Stir well and let the mixture simmer for about five minutes until it thickens slightly.
- Stir in the shredded chicken and fresh spinach. Cook until the spinach wilts, about two minutes.
- Combine the cooked pasta with the sauce, tossing until evenly coated. Season with salt and pepper to taste.
- Serve warm, garnished with more freshly grated Parmesan cheese.
Notes
Try adding sun-dried tomatoes or artichokes for a Mediterranean flair. For a lighter version, use half-and-half or a plant-based cream.
