Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Sauté the minced garlic for about one minute, until fragrant.
  3. Pour in the heavy cream and chicken broth. Stir well and let the mixture simmer for about five minutes until it thickens slightly.
  4. Stir in the shredded chicken and fresh spinach. Cook until the spinach wilts, about two minutes.
  5. Combine the cooked pasta with the sauce, tossing until evenly coated. Season with salt and pepper to taste.
  6. Serve warm, garnished with more freshly grated Parmesan cheese.

Notes
