Description

A comforting and easy one-pot dish combining creamy sauce, shredded rotisserie chicken, and broccoli with penne pasta.


Ingredients

  • 1 lb penne pasta
  • 1 whole rotisserie chicken (34 lbs, shredded, about 4 cups meat)
  • 4 cups broccoli florets (fresh or frozen)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 medium yellow onion (diced)
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 cup Parmesan cheese (freshly grated)
  • 1/2 cup mozzarella cheese (whole milk, shredded)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente.
  2. During the last three minutes of cooking, add the broccoli florets to the pot.
  3. Reserve one cup of pasta water before draining the pasta and broccoli together; set aside.
  4. In a large skillet, heat the olive oil and butter over medium-low heat.
  5. Add the diced onion and cook for 4-5 minutes until softened, then add the minced garlic and cook for another 30 seconds.
  6. Pour in the heavy cream and chicken broth, bringing to a gentle simmer for about 2-3 minutes.
  7. Remove the skillet from heat, add the cheeses, and whisk until melted. Season with Italian seasoning, garlic powder, salt, pepper, and red pepper flakes if desired.
  8. Toss in the drained pasta and broccoli, then fold in the shredded rotisserie chicken.
  9. Gradually add reserved pasta water until a creamy consistency is achieved.
  10. For a restaurant-quality finish, stir in a cold knob of butter before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of chicken broth or water if needed.
