Instructions
- Cook the gnocchi according to the package instructions, then set aside.
- In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the fresh spinach to the pan and cook until wilted, about 2 minutes.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in the crumbled feta cheese and cooked gnocchi, mixing until well combined.
- Season with salt and pepper to taste.
- Serve warm, optionally topped with freshly grated Parmesan cheese.
