- 8 oz whole wheat pasta (or any pasta of your choice)
- 1 lb lean chicken breast, diced
- 2 cups Greek yogurt
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the whole wheat pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Lower the heat, then stir in the Greek yogurt and grated Parmesan cheese until well combined.
- Add the cooked pasta to the skillet and toss to combine. Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.
Notes
Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months. Reheat with a splash of water or broth to restore creaminess.
