Description

A rich and creamy pasta dish combining whole wheat pasta, tender chicken, and a luscious garlic Parmesan sauce made with Greek yogurt.


Ingredients

  • 8 oz whole wheat pasta (or any pasta of your choice)
  • 1 lb lean chicken breast, diced
  • 2 cups Greek yogurt
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the whole wheat pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Lower the heat, then stir in the Greek yogurt and grated Parmesan cheese until well combined.
  5. Add the cooked pasta to the skillet and toss to combine. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh parsley if desired.

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months. Reheat with a splash of water or broth to restore creaminess.
