  • Total Time: 45 minutes
  • Yield: 4 servings 1x
  • Diet: None

Description

A comforting dish featuring tender chicken in a rich creamy sauce served over perfectly cooked rice, seasoned with bold Cajun spices.

Ingredients

Scale
  • 1 lb chicken breast, diced
  • 2 tablespoons Cajun seasoning
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil
  • Chopped parsley for garnish (optional)

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced chicken and season with Cajun seasoning, salt, and pepper. Cook for about 5-7 minutes until browned and cooked through.
  2. Meanwhile, boil the rice in a separate pot using chicken broth instead of water, following the package instructions.
  3. Once the chicken is cooked, lower the heat and stir in heavy cream and Parmesan cheese until you have a creamy sauce.
  4. Fluff the rice with a fork and layer it into bowls, topping with the creamy Cajun chicken mixture.
  5. Garnish with chopped parsley if desired, and serve warm.

Notes

You can substitute heavy cream with half-and-half or coconut cream. Adjust Cajun seasoning based on your spice preference.
