Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced chicken and season with Cajun seasoning, salt, and pepper. Cook for about 5-7 minutes until browned and cooked through.
- Meanwhile, boil the rice in a separate pot using chicken broth instead of water, following the package instructions.
- Once the chicken is cooked, lower the heat and stir in heavy cream and Parmesan cheese until you have a creamy sauce.

- Garnish with chopped parsley if desired, and serve warm.
