Ingredients

- 2 ripe bananas
- 1/4 cup chia seeds
- 2 cups coconut milk
- 1 tablespoon maple syrup (optional)
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Mash the ripe bananas in a medium bowl until smooth.
- Add the coconut milk, maple syrup (if using), vanilla extract, and salt to the mashed bananas and stir until well combined.
- Stir in the chia seeds until evenly distributed.
- Cover the bowl and refrigerate for at least 4 hours or overnight.
- Once set, stir the pudding before serving.
- Serve chilled, topped with banana slices or your favorite toppings.
Notes
Store leftovers in an airtight container in the fridge for up to 4-5 days. Best enjoyed cold.
