  • 2 large eggs
  • 1/4 cup maple syrup (or honey)

  • 1 cup cranberries (fresh or frozen)
  • 1 orange (zest and juice)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the milk, eggs, maple syrup, vanilla extract, orange zest, and orange juice until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until fully combined.
  5. Gently fold in the cranberries and nuts if you’re using them.
  6. Pour the oatmeal mixture into the greased baking dish, spreading it evenly.
  7. Bake for 30-35 minutes, or until the top is golden brown and the center is set.
  8. Allow to cool slightly before serving. This dish is delicious served warm or at room temperature.
