- 1 teaspoon baking powder

- 1 teaspoon cinnamon
- 2 cups milk (or non-dairy milk)
- 2 large eggs
- 1/4 cup maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1 cup cranberries (fresh or frozen)
- 1 orange (zest and juice)
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, combine the rolled oats, baking powder, salt, and cinnamon.
- In another bowl, whisk together the milk, eggs, maple syrup, vanilla extract, orange zest, and orange juice until smooth.
- Pour the wet mixture into the dry ingredients and mix until fully combined.
- Gently fold in the cranberries and nuts if you’re using them.
- Pour the oatmeal mixture into the greased baking dish, spreading it evenly.
- Bake for 30-35 minutes, or until the top is golden brown and the center is set.
- Allow to cool slightly before serving. This dish is delicious served warm or at room temperature.
