Cranberry Curd

Description

A vibrant cranberry curd that’s sweet and tart, perfect for spreading on toast or using in desserts.


Ingredients

  • 12 oz fresh (or frozen) cranberries
  • 1/2 cup granulated sugar
  • 3/4 cup water
  • 3 large egg yolks
  • 2 tbsp unsalted butter

Instructions

  1. In a medium saucepan, combine the cranberries, sugar, and water over medium-high heat and bring to a boil.
  2. Reduce heat to low and let it simmer for 10 minutes until the cranberries burst and soften.
  3. Remove from heat and cool for 5-10 minutes.
  4. Transfer the mixture to a blender and blend until smooth.
  5. Pour the mixture back into a pot and add egg yolks, whisking to combine.
  6. Cook over medium heat, whisking for 5-10 minutes until thickened.
  7. Remove from heat and stir in butter until melted.
  8. Pour into a sterilized container, cool completely, and store in the fridge.

Notes

Adjust sugar based on tartness of cranberries. Try adding spices or citrus zest for variations.
