Description
A vibrant cranberry curd that’s sweet and tart, perfect for spreading on toast or using in desserts.
Ingredients

- 12 oz fresh (or frozen) cranberries
- 1/2 cup granulated sugar
- 3/4 cup water
- 3 large egg yolks
- 2 tbsp unsalted butter
Instructions
- In a medium saucepan, combine the cranberries, sugar, and water over medium-high heat and bring to a boil.
- Reduce heat to low and let it simmer for 10 minutes until the cranberries burst and soften.
- Remove from heat and cool for 5-10 minutes.
- Transfer the mixture to a blender and blend until smooth.
- Pour the mixture back into a pot and add egg yolks, whisking to combine.
- Cook over medium heat, whisking for 5-10 minutes until thickened.
- Remove from heat and stir in butter until melted.
- Pour into a sterilized container, cool completely, and store in the fridge.
Notes
Adjust sugar based on tartness of cranberries. Try adding spices or citrus zest for variations.
