- 2 large eggs

- 1 cup dried cranberries (or fresh)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another large bowl, cream the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Gradually mix in the dry ingredients, alternating with the milk.
- Gently fold in the cranberries until evenly distributed.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before transferring to a wire rack.
Notes
For added moisture, consider replacing half the butter with applesauce. You can swap in blueberries or add orange zest for a twist!
