Description

Delightful cranberry bars made from leftover cranberry sauce, perfect for any occasion.


Ingredients

  • 1 cup sugar
  • 1 cup leftover cranberry sauce
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour an 8×8 inch baking pan.
  2. In a large mixing bowl, combine sugar, cranberry sauce, and melted butter. Mix well until fully blended.
  3. Add the eggs and vanilla extract, stirring until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined. If using nuts, fold them in gently.
  5. Pour the batter into the prepared baking pan, spreading it evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool before cutting into squares and serving.

Notes

Serve warm or at room temperature with whipped cream or vanilla ice cream. Can be stored at room temperature for up to three days.
